This salad has proven to be a hit every time I make it. I found this recipe years ago on one of my favorite blogs and it's so easy to throw together. Anytime I go somewhere that I need a side, you can expect this salad. And every time, someone asks me for the recipe. So, I thought I would share it!
Here's what you'll need:
- 2 cups of cheddar cheese
- 2 cans of whole kernel corn
- 1 bag of chili cheese Fritos
- 1 green pepper
- 1 red onion
- 1 cup mayonnaise
Here's what you'll do:
1. drain your corn
2. chop your onion and green pepper
3. put everything in a bowl, except the Fritos
4. mix it all up

5. cover and place in the fridge for at least an hour
it needs to get nice and cold
6. mix in the Fritos just before serving
{you don't want them to get soggy}
I promise you'll be asked for the recipe! I love to make this salad, the only downfall, it needs to be eaten all in one setting because of the chips. I hope you enjoy!
