Strawberry-rhubarb Pie

Recently we were given some rhubarb and so Colson and I took the opportunity to make a strawberry rhubarb pie! Nothing says 'it's spring' like a nice strawberry rhubarb pie, in my opinion!
 
 
My little helper! We washed all of our rhubarb and strawberries, and cut them into bite size pieces.

 
Last year I found the easiest recipe for strawberry pie on one of my favorite blogs, Momfessionals! So, if you don't like rhubarb, just use more strawberries!

 
Here's what you will need:
 
-Two 9" pie crusts
-2 1/2 cups of strawberries, quartered
-2 1/2 cups of rhubarb
-3/4 cups sugar
-1/4 teaspoon salt
-1/3 cup flour

 
Colson, eager to begin!

 
Add your 3/4 cup of sugar, 1/3 cup of flour, and

 
1/4 teaspoon of salt to your fruit.

 
Stir it all together with a wooden spoon until it's coated (don't overmix!)

 
Pour the filling into one of the pie crusts.

 
And then put your second pie crust on top.
(We made this one pretty for Papa Kim, normally I just plop the second crust on top!)
 

 
Andrea shared the best secret when it comes to store bought pie crusts.... rub some milk all over the top and then sprinkle it with sugar! It's amazing!
 
 
Cover the edges of the pie with foil. I also put my pies on a foil covered baking sheet because it will make a mess in the oven!
 
Bake at 375 degrees for 25 minutes, pull off the foil on the edges and bake it for an additional 25-30 minutes.

 
And then wait....
Let it cool and then refrigerate.

 
So good and simple!
